As per my usual WIAW post's, here's what I ate on Monday.
For breakfast I had two leftover Coconut Flour and Greek Yogurt Pancakes, which I topped with more full fat Total, two figs, and honey flavoured agave syrup. Pancakes definitely make Monday mornings that little bit easier!
I also had a glass of almond milk mixed with barley grass powder.
My morning snacks were a pear with salt and pepper cashew and almonds, and you can see I was still working my way through the almond milk, as well as drinking an Orange and Coconut tea, which is my favourite!

I had been really disorganised with my Lunch as I had been at Iestyn's house till late the night before, and hadn't had time to prepare something. So I went for one of my favourite quick lunches, but I got some funny looks when I waled into work with an avocado, a tin of tuna and a whole lettuce! Really they should be used to me by now! ;) So, I mashed a whole avocado with a tin of tuna, and spread it onto lettuce 'wraps'. Quick, and easy, and more importantly filling and healthy! If I'd had more time I think some sea salt, a splash of lemon juice, fresh coriander, and a chopped tomato would of made it even better: next time!
As it was nearing 5 o'clock I ate a banana at my desk, which went unpictured, and when I got into the car I ate a date.
And then, it was gym time! I spent twenty minutes on the Cross trainer- longer than usual as I'd put new songs on my iPhone and I really wanted to just zone out and enjoy little music.I then did a circuit which involved overhead squats, skipping, and burpees as well as a few other things, which I did for about 20-30 minutes, before I headed home to make dinner.
Dinner was the leftover curry from Saturday night, and I took my own advice and toasted the coconut before adding it to the cauliflower rice. I love leftover curry, it just tastes so much better when the spices have time to settle!
Afte dinner I had my usual mug of tea with almond milk, while watching the original The Killing: we watched the last episode of the first series last night, I can't wait for the next series to be up on Netflix! Have you been watching it? Or how about the American re-make? We can't decide if we want to give it a go!

Your breakfast pancakes are to die for, love the addition of the figs!
The chocolate bars look lush! I'm a massive chocoholic so each week I buy one nice bar, lindt or such, and allow myself a square or two a night rather than get through a 5 pack of Cadburys, seems to be a win win at the mo as I love trying the new flavours-the mint one is on the list for next week!
